Cinnamon, orange and blueberry protein muffins

Ingredients 

1 ½  cups gluten free flour

¼ cup pea protein powder 

1 tablespoon baking powder

½ teaspoon sea salt

2 tablespoons coconut sugar

1 egg, slightly beaten

1 cup unsweetened almond milk

¼ cup orange flavored extra Virgin Olive Oil 

1 ½ tablespoons of Cinnamon 

Frozen Blueberries to place on top before baking

Instructions

  • Preheat the oven to 375°F. Butter muffin pans. Mix the flour, pea protein powder baking powder, salt, and sugar in a large bowl. Add the egg, milk, and oil, stirring only enough to dampen the flour; the batter should not be smooth. 
  • Mix coconut sugar and cinnamon together in a bowl.  
  • Spoon into the muffin pans, filling each cup about two-thirds full. 
  • Take 1 teaspoon of sugar and cinnamon mixture and gently fold/swirl into each muffin.
  • Top each muffin with frozen blueberries to taste.
  • Bake for about 20 to 25 minutes.
