2018 Week 35 Strawberry Protein Balls

Ingredients

1 Cup frozen strawberries

1 Cup oats

1 scoop No Whey – pea protein powder 

1/2 Cup sunflower seeds

1/2 Cup coconut flour

2 Tbsp Coconut oil

Desiccated coconut

Instructions

  1.  Place first 5 ingredients in a food processor with 1 TBSP of the coconut oil.
  2.  It will take some time, be patient!
  3. Eventually it becomes a fine paste and form a ball.
  4. If the mixture looks dry add the second spoon of coconut oil. It depends a little on how much oil is released from the sunflower seeds.
  5. Use a teaspoon to scoop balls.
  6. Roll the balls in desiccated coconut.
  7. Refrigerate for 2 hrs or overnight.
  8. Enjoy!
