Week 47 Spicy Chicken Mason Jar Salad

Dressing Ingredients

2 limes

1 TBSP chopped cilantro 

1/2 shallot, minced

1.5 TBSP white wine vinegar 

pinch of salt & pepper 

Directions 

Combine all ingredients in a pint size mason jar, seal the lid and shake to mix together.

Avocado Pickles Ingredients 

1 cup distilled white vinegar or rice wine vinegar

1 cup water

1/2 cup coconut sugar

1 tablespoon Pickling spice – I use this brand 

2 firm avocados

Directions 

Place the vinegar, water, sugar, and pickling spice into a medium saucepan. Bring to a boil, stirring occasionally to dissolve the sugar and salt. Remove the pan from the heat and let cool to room temperature.

Meanwhile, prepare the avocados. Peel and pit the avocados, then cut into 1/2-inch-wide slices or cubes. Place them in large quart canning jar. Pour the cooled brining liquid into the jars, completely covering the avocado pieces, and seal the jars. Refrigerate for at least 2 hours before serving.

Slow-Cooker Chicken 

1 whole chicken 

2 tablespoons sea salt

1 tablespoon ground cumin

1 tablespoon freshly ground black pepper

1 tablespoon dried oregano

2 teaspoons ground cinnamon

1 teaspoon cayenne pepper, or to taste

8 whole cloves garlic, smashed

4 chipotle peppers (canned or dried)

1 (14- or 15-ounce) can diced tomatoes

2 cups chicken stock

Instructions 

  1. Place all the ingredients in the slow cooker. Set to cook on LOW for 8 hours. The meat is done when it literally falls off the bone.

Salad Ingredients 

4 cups loosely packed mixed greens

4 cups shaved or shredded Brussels sprouts 

1 medium Granny Smith apple, cored and thinly sliced

Juice of 1/2 medium lemon

2 cups slow-cooker chicken (see Recipe above)

Avocado pickles, large dice (see Recipe above)

1/4 cup crushed gluten free tortilla chips

1/4 cup toasted pumpkin seeds 

1/2 cup lime and cilantro dressing (see Recipe above)

Ingredients 

  1. Place the apple slices and lemon juice in a medium bowl and toss together.
  2. When ready to serve, divide the ingredients between 5 mason jars in the following order;  chicken, apple, pumpkin seeds, avocado, tortilla chips, brussels sprouts, mixed greens.
