2021 Week 6 Pumpkin Protein Bites

Ingredients

1/4 cup chopped almonds

1/4 cup chopped walnuts

1/4 cup maple syrup or local honey

1/2 cup pumpkin puree

1 tsp pumpkin spice

1 TB Lily’s (sweetened with stevia) chocolate chips

1 1/2 scoops No Whey (pea protein powder)

Instructions

  1. Combine all ingredients in a large bowl. Mix until well incorporated.
  2. Scoop out approximately 12 bites with a small cookie scooper.  Bites will be a firm pie consistency.
  3. Place bites in the refrigerator and ENJOY throughout the week as a snack.
