2020 Week 11 Spicy Tuna Wrap

Ingredients

2 (5 oz) cans Bumble Bee® Solid White Albacore Tuna, drained

1 avocado

1-2 Tbsp Sriracha, depending on how spicy you like it! 

1 Tbsp Dijon mustard

2 Tbsp red or sweet onion, chopped, optional

2 green onions, chopped

1 Tbsp fresh cilantro, chopped or 1 tsp dried 

Salt and pepper, to taste

2 heaping cups leafy green lettuce, I used spinach

1 cup matchstick carrots

4 cheese (parmesan) wraps 

Instructions

1. In a medium bowl, mix together tuna and all ingredients except avocado  until combined. Add in the rest of the ingredients through the salt and pepper, mixing well.

2. To assemble, top each tortilla with a 1/2 cup leafy greens, 1/2 cup matchstick carrots and divide the tuna mixture evenly among the wraps. I carry the avocado with me and slice as needed. 

3. Tightly roll up the tortilla, slice and enjoy!
