2018 Week 43 Paleo Biscuit Cups

Ingredients

Biscuit

I use Bob’s Red Mill biscuit and baking mix.  Follow the recipe on the back. 

Filling

2 large eggs, raw

Any assortment of cooked veggies, cheese, meat, etc. – I use cooked chicken sausage and cut them into bite size pieces. 

Instructions 

 1. Mix, prepare and roll the dough out between two sheets of parchment paper until it is about 1/2″ thick.

2. Cut into pieces and press into a greased muffin tin. You need to make sure the dough comes out past the top of the tin. This will allow you to attach the cap.

3. Pour the egg/meat mixture into each biscuit base.

4 . Take the dough you set aside and roll out to 1/4″ thick and cut into a circle large enough to cap the biscuit. Pinch the edges shut.

5. Bake in the oven at 350 degrees for 20 minutes.

6. Enjoy!
