2018 Week 32 Coconut Vanilla Protein Balls

*These are Melissa’s favorite! They first made their debut in Melissa’s kitchen in 2015, since then they have appeared at least once on the yearly eating healthy challenge.  

Ingredients

1 cup coconut butter

3/4 cup coconut yogurt

1 scoop No Whey (pea protein powder)

3 TBS local honey

1/4 tsp sea salt

1/2 cup shredded coconut

Directions

  1. Mix all ingredients together.
  2. Form into balls.
  3. Roll in addition coconut or cocoa powder if desired.
  4. Enjoy!
