2018 Week 18 Orange Overnight Oats

Ingredients 

2 cups unsweetened coconut milk 

2 cups gluten free old fashioned rolled oats 

1 cup plain unsweetened Greek yogurt 

1/2 cup unsweetened flaked coconut 

2 oranges, zested (4 teaspoons) 

2 TBSP honey (I used 8-10 drops of liquid orange stevia!) 

1 tsp fresh thyme

Directions

  1. In a large bowl combine all ingredients and divide among 6 pint size mason jars.
