Week 51 Purple Cabbage Mason Jar Salad

Ingredients 

1/4 cup pine nuts 

2.5 cups shredded red cabbage 

1 small can mandarin oranges, drained 

2 green onions, chopped 

1/4 cup sweetened dried cranberries 

1/4 cup apple cider vinegar 

1/4 extra virgin olive oil 

1 TBSP coconut sugar 

1/4 tsp sea salt 

Instructions 

  1. Layer ingredients in the following order in a mason jar.  Oranges, onions, pine nuts, cranberries, cabbage. 
  2. For the dressing, whisk together vinegar, oil, sugar, and salt in a bowl until sugar and salt dissolve.  I carry this in a small mason jar separate for the salad.
