Week 46 Thai Chicken Mason Jar Salads

Ingredients 

Dressing 

  • 1 tablespoon almond butter
  • 1 teaspoon soy sauce
  • .5 teaspoon honey 
  • 1/8 teaspoon ground ginger
  • .5 teaspoon apple cider vinegar
  • 2 tablespoons water, to thin

Salad 

  • 1 red bell pepper, cubed 
  • 4  tablespoons green onion, diced
  • 1 carrot, shredded
  • .5 cup cooked quinoa
  • 2 tablespoons cilantro, diced
  • 1 mango, diced
  • 4 4oz chicken breasts, diced
  • 4 cups mixed greens 
  • 4 tablespoons chopped cashews

Directions

Makes 4 salads 

  1. Make dressing and store in separate small mason jar. 
  2. Layer Mason jars in the following order; mango, quinoa, chicken, pepper, carrot, cashews, mixed greens and onions.
