Ingredients
Dressing
- 1 tablespoon almond butter
- 1 teaspoon soy sauce
- .5 teaspoon honey
- 1/8 teaspoon ground ginger
- .5 teaspoon apple cider vinegar
- 2 tablespoons water, to thin
Salad
- 1 red bell pepper, cubed
- 4 tablespoons green onion, diced
- 1 carrot, shredded
- .5 cup cooked quinoa
- 2 tablespoons cilantro, diced
- 1 mango, diced
- 4 4oz chicken breasts, diced
- 4 cups mixed greens
- 4 tablespoons chopped cashews
Directions
Makes 4 salads
- Make dressing and store in separate small mason jar.
- Layer Mason jars in the following order; mango, quinoa, chicken, pepper, carrot, cashews, mixed greens and onions.
