Week 44 Peach and Oat Mason Jar Salad

Serves 4 

Ingredients 

2 TBSP coconut oil 

pinch of salt, pepper, and cayenne pepper

1 cup old fashioned gluten free rolled oats 

2 peaches, peeled and sliced 

2 grilled chicken breasts 

4 cups mixed greens

Directions 

  1. Heat coconut oil in a skillet over medium-high heat about 30 seconds, or until hot. Add the oats and shake or stir the pan to coat them all in the oil.
  2. Reduce heat to medium-low and sprinkle with the salt, pepper and optional cayenne. Cook, stirring frequently, another 1-2 minutes or until the oats appear lightly toasted (careful to watch for any signs or smells of over-toasting or burning).
  3. Remove from the pan immediately and set aside to cool.
  4. Layer the mason jar salads in the following order.  1/2 peach in the bottom, 1/4 cup of (cooled) oats, .5 grilled chicken breast, 1 cup of mixed greens. 
  5. Serve with extra virgin olive oil and reduced balsamic vinegar.
