Week 44 Salmon egg cups

6 servings 

Ingredients 

5 oz smoked salmon, torn into bite-size pieces

6 oz cold Neufchâtel cheese (or 1/3-less fat cream cheese), diced

1/4 cup chopped fresh dill

12 eggs  

1 tsp pepper

Directions

  1. Coat a 12 muffin tin with olive oil. 
  2. Divide the salmon, dill, cream cheese and pepper into the muffin tin.  
  3. Crack an egg into each muffin tin. 
  4. Bake at 350 degrees for 30 minutes until eggs are set. 
  5. Enjoy!
