Ingredients
3 TBSP Extra virgin olive oil
2 TBSP Balsamic vinegar
4 Grilled Chicken breasts, cut into bite size pieces.
16 slices of uncured pepperoni, chopped into bite size pieces
12 slices Fresh sliced mozzarella
16 Grape tomatoes
4 TBSP chopped red onion
4 TBSP Homemade or store bought (gluten free) pesto
Spinach
Instructions
- Mix olive oil and balsamic vinegar together for dressing. Divide and place in the bottom of 4 mason jars.
- Mix grilled chicken and pesto in a bowl.
- Layer Mason jars in the following order; 4 grape tomatoes in each jar, 1 TBSP red onion in each jar, 3 slices of mozzarella in each jar, divide the pesto chicken evenly in each jar, divide the pepperoni evenly in each jar, fill each jar with spinach to the top.
