2017 Week 12 Pesto Mason Jar Salad

Serves 4 

Ingredients 

3 TBSP Extra virgin olive oil 

2 TBSP Balsamic vinegar 

4 Grilled Chicken breasts, cut into bite size pieces. 

16 slices of uncured pepperoni, chopped into bite size pieces 

12 slices Fresh sliced mozzarella 

16 Grape tomatoes 

4 TBSP chopped red onion 

4 TBSP Homemade or store bought (gluten free) pesto 

Spinach 

Instructions 

  1. Mix olive oil and balsamic vinegar together for dressing.  Divide and place in the bottom of 4 mason jars. 
  2. Mix grilled chicken and pesto in a bowl. 
  3. Layer Mason jars in the following order; 4 grape tomatoes in each jar, 1 TBSP red onion in each jar, 3 slices of mozzarella in each jar, divide the pesto chicken evenly in each jar,  divide the pepperoni evenly in each jar, fill each jar with spinach to the top.
  4. Enjoy!
