2017 Week 10 Pumpkin Pie Overnight Oatmeal

Ingredients

⅓ cup gluten free old-fashioned rolled oats 

⅓ cup unsweetened vanilla almond milk 

⅓ cup pumpkin puree 

⅓ cup Greek yogurt

1 tablespoon Chia seeds 

1/2 teaspoon pumpkin pie spice 

1/2 teaspoon vanilla or almond extract

Sweetener – 6 drops of liquid Stevia. You can also use 2-3 teaspoons honey or maple syrup.

Instructions

1. Combine all ingredients in a small mason jar with a lid. 

2. Cover and refrigerate overnight, or at least 4 hours.

3. Enjoy!
