Ingredients
1 – box (gluten free) Sugar Cookie mix
2 tsp coconut sugar
1/4 cup almond milk
1 stick unsalted butter
1/2 tsp almond extract
1 large egg
2 TBSP pea protein powder
Spray coconut oil

Instructions
- Soften butter.
- Add all liquid ingredients into mixer (extract, egg, butter, milk) and mix until combined.
- Slowly add the coconut sugar, pea protein powder and finally cookie mix.
- If needed add more milk, 1 tsp at a time.
- Place dough on a pastry mat and roll out. I use coconut oil to prevent dough from sticking to the pastry mat or rolling pin.
- You are now ready for the cookie cutters!
- Spray a cookie sheet with coconut oil.
- Bake at 350 for 11 minutes.
- Allow cookies to cool on a cooling rack.
- Finally have so much fun decorating!
