2021 Week 6 Dinners

Crockpot Teriyaki Chicken

1 and 1/2 pounds chicken breasts, sliced

1/4 cup liquid aminos or Tamari

1/2 cup packed coconut sugar

1/2 cup Teriyaki sauce

1 tablespoon sesame oil

3 carrots sliced

1 green bell pepper sliced

1 teaspoon ginger paste

1 cup chicken broth

3 cloves garlic, minced

Crockpot Sausage with Onions & Peppers

1-16 oz. package Sausage, sliced

1 onion sliced

3 Bell Peppers (one green, one yellow, and one red) sliced

2 cans diced tomatoes, fire roasted and not drained

1/4 cup chicken broth

2 cloves garlic minced

1 teaspoon (gluten free) Cajun seasoning

Crockpot Beef & Broccoli

2 pounds beef, sliced (sirloin works well)

1 box of cream of mushroom

1/2 cup coconut sugar

3 cloves garlic, minced

1/4 cup liquid aminos or Tamari

1 teaspoon ginger paste

1 tablespoon sesame oil

2 cups frozen broccoli

Instructions

  1. Combine all ingredients in a ziploc bag and place in the freezer. 
  2. Dump frozen ziploc bag contents into Crockpot, set on keep warm and cook all day.  
  3. Enjoy! 

Crockpot Cilantro Lime Chicken 

1 and 1/2 pounds chicken breasts, chopped

1/2 white onion, chopped

1 red bell pepper, chopped

1 cup black beans, drained

1 cup frozen corn, drained

4 oz. can green chilies

1 jalapeño, seeded and chopped

juice of two limes

3 cloves garlic, minced

1 cup cilantro, chopped

2 teaspoons cumin

Instructions

  1. Combine all ingredients in a ziploc bag and place in the freezer. 
  2. Dump frozen ziploc bag contents into Crockpot, set on keep warm and cook all day.  
  3. Enjoy! 

Grilled Mustard Steak

Steaks of your choice

1 1/2 Tablespoons yellow mustard

1 finely chopped garlic clove (you can also just mince it)

1 Tablespoon brown sugar or honey

1 Teaspoon each salt and pepper   

Instructions

  1. Mix the ingredients together until they are well combined, place the marinade in the refrigerator until your ready to use it or place steak and marinade in a ziplock container and freeze.

Baked Chicken

4 Boneless and skinless chicken breasts

4 Tbs coconut sugar

3 tsp extra virgin olive oil

4 Garlic cloves, minced

Instructions :

  1. Preheat the oven to 400 degrees and spray baking dish with oil.
  2. Put the olive oil in a small pan and saute the garlic until it is tender.
  3. Remove the olive oil and garlic from heat and add the coconut sugar.
  4. Place chicken breasts into the baking dish and spread the coconut sugar and garlic mixture over top of the chicken.
  5. Place in the oven and bake for 30-45 minutes or until the chicken is cooked completely through.
