2021 Week 5 Roast Chicken

Ingredients

1 – 2 6 ounces boneless, skinless chicken breast

1/4 cup olive oil

1 orange, quartered

1 onion, quartered

salt and pepper, to taste

2 tsp dried rosemary

For the glaze

4 TBSP butter

4 TBSP whole grain mustard

4 TBSP honey

2 TBSP apricot jam

4 TBSP Grand Marnier

Directions

  1. Preheat oven to 400 degrees.
  2. Season chicken in a cast iron skillet with olive oil, salt, pepper and rosemary. Place around the chicken the orange and onion.
  3. Cook for 20 minutes or until done.
  4. Combine all ingredients in a sauce pan for the glaze and bring to a boil and remove from heat.
  5. During the last 5 minutes of baking add 1/2 of the glaze to the chicken.
  6. Serve chicken with remaining glaze.
  7. Enjoy!
