2020 Week 21 Crockpot Garlic & Mint Pork Loin

Ingredients

1 TBSP Extra Virgin Olive Oil
5 sprigs of fresh mint
2 lb pork loin
.5 tsp salt
.5 tsp pepper
1/4 cup lime juice
1/4 cup apple cider vinegar
3 cloves of garlic; peeled and sliced
1 onion; peeled and thinly sliced

Directions

1. Coat crockpot with olive oil.
2. Place mint in the bottom of the crockpot
3. Place pork on top of mint
4. Mix salt, pepper, lime juice and apple cider together and pour on top of pork.
5. Place garlic and onions on top of pork loin.
6. Cover and cook on low for 6-8 hours.
7. Discard mint.
Optional salad

Watermelon Cucumber Salad/Salsa

3 cups watermelon, cubed
1 cup cucumber, peeled and cubed
1 TBSP fresh mint leaves, chopped
1 TBSP scallions, chopped
1 TBSP lime juice

Directions

1. Mix all ingredients in a large bowl. Chill and serve.
