2020 Week 17 Grilled Chicken and Salmon

Ingredients 

Salmon or Chicken 

1/4 cup extra virgin olive oil 

Rind of 1 lemon 

2 TBSP lemon juice 

2 garlic cloves 

1/4 tsp black pepper 

2 TBSP chopped parsley

1 lemon (if grilling salmon) sliced thick.

Directions 

  1. Combine all ingredients in a glass bowl or ziploc bag.  
  2. Marinate overnight or freezer for later in the week. 
  3. Grill chicken until cooked through. 
  4. Place lemon slices on grill and salmon on top with skin side down.  Cook until desired temperature.  Using the lemon slices will prevent the salmon from sticking to the grill. 
  5. Enjoy!
