Ingredients
Salmon or Chicken
1/4 cup extra virgin olive oil
Rind of 1 lemon
2 TBSP lemon juice
2 garlic cloves
1/4 tsp black pepper
2 TBSP chopped parsley
1 lemon (if grilling salmon) sliced thick.
Directions
- Combine all ingredients in a glass bowl or ziploc bag.
- Marinate overnight or freezer for later in the week.
- Grill chicken until cooked through.
- Place lemon slices on grill and salmon on top with skin side down. Cook until desired temperature. Using the lemon slices will prevent the salmon from sticking to the grill.
