Ingredients
2 medium garlic cloves, minced or finely grated
1 pounds Roma or cherry tomatoes, roughly chopped (about 5 cups total)
3 tablespoons balsamic vinegar
4 tablespoons extra virgin olive oil
1/2 teaspoon sea salt, divided
2 pounds boneless, skinless chicken breasts or thighs
2 TBSP dried basil
Instructions
- Add chicken to the bottom of the crockpot.
- Mix all other ingredients in a bowl and pour over chicken.
- Cook on low all day.
- Serve with brown rice pasta, veggie pasta or brown rice ramen noodles (shown above).
