2019 Week 43 Crockpot Tomato Basil Chicken

Ingredients

2 medium garlic cloves, minced or finely grated

1 pounds Roma or cherry tomatoes, roughly chopped (about 5 cups total)

3 tablespoons balsamic vinegar

4 tablespoons extra virgin olive oil

1/2 teaspoon sea salt, divided

2 pounds boneless, skinless chicken breasts or thighs

2 TBSP dried basil 

Instructions 

  1. Add chicken to the bottom of the crockpot. 
  2. Mix all other ingredients in a bowl and pour over chicken. 
  3. Cook on low all day. 
  4. Serve with brown rice pasta, veggie pasta or brown rice ramen noodles (shown above). 
  5. Enjoy!
