2019 Week 42 & 43 Crockpot Fajita Chicken

Ingredients

1 pounds boneless, skinless chicken breasts or thighs

1 medium yellow onion, thinly sliced

1 medium bell pepper (red, yellow, orange or green), thinly sliced

1 16-oz jar or container organic salsa

1/2 teaspoon sea salt

Juice of 1 lime (about 2 tablespoons)

Instructions

  1. Place chicken in the bottom of the crockpot.
  2. Pour Salsa over chicken.
  3. Place onions and peppers on top.
  4. Splash with sea salt and lime juice.
  5. Cook on low all day.
  6. Serve with brown rice or Parmesan Cheese bowls (shown above).
  7. Enjoy! Cheese wraps
