Ingredients
1 pounds boneless, skinless chicken breasts or thighs
1 medium yellow onion, thinly sliced
1 medium bell pepper (red, yellow, orange or green), thinly sliced
1 16-oz jar or container organic salsa
1/2 teaspoon sea salt
Juice of 1 lime (about 2 tablespoons)
Instructions
- Place chicken in the bottom of the crockpot.
- Pour Salsa over chicken.
- Place onions and peppers on top.
- Splash with sea salt and lime juice.
- Cook on low all day.
- Serve with brown rice or Parmesan Cheese bowls (shown above).
