2019 Week 34 Grilled Asian Chicken

INGREDIENTS

1/4 Cup Minced Onion

1/2 Cup Peanut Oil

1/4 Cup Rice Vinegar

2 Tablespoons Water

2 Tablespoons Minced Fresh Ginger

1 Tablespoon Finely Shredded Carrot

2 Tablespoons Ketchup

1 Tablespoon plus 1 Teaspoon Light Soy Sauce

2 Teaspoon Coconut Sugar

1 1/2 Teaspoon Lemon Juice

1 Clove Minced Garlic

1/2 Teaspoon Salt

1/4 Teaspoon Pepper

4 Chicken Breasts, boneless, skinless

Instructions 

  1. Combine all ingredients in a glass bowl or ziploc to marinate or freeze. 
  2. Grill over medium heat until Chicken is cooked through. 
  3. Enjoy!
