2019 Week 19 Cashew butter protein bars

Ingredients 

4 tbs Butter, unsalted (or ghee) 

1 c. Organic Cashew Butter, creamy

1 tbs Swerve, confectioners (or 6-8 drops of liquid stevia) 

1 tsp Maple syrup

1 scoop No Whey – pea protein powder 

1/2 tsp Vanilla extract

1/8 tsp (pinch) Himalayan pink salt

1 c. Unsweetened coconut, shredded

Topping – melted chocolate chips (Lily’s sweetened with Stevia) 

Instructions 

1 Melt butter 1 in microwave safe bowl.

2 Stir in cashew butter, mix well.

3 Add Swerve, maple, vanilla, protein powder and salt. Mix until incorporated.

4 Mix in shredded coconut.

5 Scoop into brownie squares pan or silicone mold.

6 In the microwave or on the stovetop, gently melt together the chocolate chips.

7 Drizzle or spread melted chocolate over bars.

8 Freeze 30 minutes or leave in fridge 1+ hrs.

9 Pop out into bag or container. Store in fridge or freezer.
