Dressing – I use this recipe for chili-lime dressing
1/2 cup cherry tomatoes
1/4 cup diced red onion
1/4 cup sliced green onion
1 cup chopped grilled chicken (I use leftover or a rotisserie chicken)
1/4 cup pumpkin seeds
1/4 cup fresh minced cilantro
4-6 cups mixed lettuce and greens
Instructions
- Divide the ingredients evenly between two wide-mouth pint-size Mason jars. Make sure to follow the order listed in order to keep the lettuce crisp.
- Stuff in as much lettuce as you can, screw on lid, and stash in fridge 2 for up to a week.
