Ingredients
1/4 Cup Cashews
2/3 Cup Hazelnuts
1/2 Cup Creamy No Stir Almond Butter
1/3 Cup No Whey – pea protein powder
1/4 tsp Vanilla Extract
1/4 Cup + 1 TBS Honey
Instructions
1. In the bowl of a food processor, add the cashews and hazelnuts. Pulse to finely chop. The nuts should resemble coarse flour.
2. Line a small baking sheet or plate with parchment paper and set aside.
3. In a large bowl mix together the finely chopped cashews and hazelnuts with the almond butter, and protein powder. Add in the vanilla extract and honey and use your hands to mix well.
4. Use your hands and scoop out about 1 tablespoon of the mixture. Roll into a ball (should be about 1-1 .’’) and place on prepared baking sheet. Repeat rolling until all the mixture is used.
5. Transfer the baking sheet to the freezer and freeze for 20 minutes.
6. Lightly roll the protein bites in more vanilla protein powder. Eat or store in the refrigerator for up to 6 weeks. Enjoy!
