2018 Week 31 Grilled Ribeye with onion and blue cheese sauce

Ingredients 

4 ribeye steaks

sea salt and pepper to taste

1 stick unsalted butter 

1 large yellow onion, thinly sliced 

1 cup greek yogurt 

3 to 4 TBSP Worcestershire sauce 

3/4 cup crumbled blue cheese 

Directions 

  1. Preheat grill to medium heat. 
  2. Sprinkle the steaks with salt and pepper. 
  3. Smear both sides of the steak with 1/2 stick of butter. 
  4. Grill steaks until desired temperature is reached. 
  5. Melt the remaining 1/2 stick butter in a large skillet and sauté the onions until golden brown. 
  6. Add the yogurt and Worcestershire sauce.  Allow it to bubble up, then add the blue cheese and stir together until it melts.  
  7. Serve steaks with the sauce. 
  8. Enjoy!
