2018 Week 28 Crockpot Garlic-Mint Pork Loin

Ingredients 

5 sprigs of fresh mint

2 lb pork loin

.5 tsp sea salt 

.5 tsp pepper 

1/4 cup lime juice 

1/4 cup apple cider vinegar 

3 cloves of garlic, minced 

1 onion, thinly sliced 

Instructions 

  1. Place mint in the bottom of crockpot. 
  2. Place pork loin on top of mint. 
  3. Mix salt, pepper, lime juice and apple cider vinegar and pour on top of pork. 
  4. Place garlic and onion on top of pork. 
  5. Cover and cook on low for 6-8 hours. 
  6. Enjoy and discard mint.
