2018 Week 8 Caprese Zoodle Mason Jar Salad

INGREDIENTS

4 large zucchini, spiralized or purchased spiralized from the grocery store. 

kosher salt

Freshly ground black pepper

2 c. cherry tomatoes

1 c. mozzarella balls, quartered if large

1/4 c. fresh basil leaves

2 lbs grilled chicken breast cut into cubes 

DRESSING

2 tbsp. extra-virgin olive oil

1 tbsp. balsamic vinegar

INSTRUCTIONS 

  1. Divide all ingredients between 4 mason jars and layer as follows; tomatoes, noodles,  dash of sea salt & pepper, mozzarella, basil, chicken.  
  2. I carry the dressing separately in a smaller mason jar.  However if you would like divide the dressing and place in the very bottom or first in the mason jars.
  3. Enjoy!
