2018 Week 2 Carrot Cake Protein Balls

Ingredients

1 tablespoon coconut oil

1/3 cup almond butter

1/4 cup coconut nectar 

1/2 cup old fashioned oats

2 tablespoons chia seeds

1/4 cup ground flax

1/4 cup shredded coconut

1 scoop No Whey (Pea protein powder) 

1 cup finely shredded carrots

1/2 teaspoon ground cinnamon

Instructions

1. In a microwave safe bowl, melt the coconut oil. Stir in the almond butter and coconut nectar, until smooth.

2. Stir in the oats, chia seeds, ground flax, shredded coconut, protein powder, carrots and ground cinnamon.

3. Roll into 1 tablespoon balls.

4. Store in the fridge for up to a week or the freezer for up to 3 months.
