Week 48 Crockpot Chicken Tagine

Ingredients 

1 onion, chopped 

4 garlic cloves, minced 

1 lemon, juiced and zested 

2 tsp dried rosemary 

1 tsp dried thyme 

4 boneless, skinless chicken breast 

20 pitted green olives, crushed 

2 TBSP unsalted butter, cut into small pieces 

2 TBSP water 

2 TBSP arrowroot 

Directions

  1. Combine onion, garlic, lemon juice & zest, rosemary and thyme in the bottom of the crockpot.  Top with chicken, olives and butter. 
  2. Cook on keep warm all day. 
  3. If sauce is not thick at the end of the day, remove chicken and in a small bowl combine water and arrowroot.  Add mixture to crockpot, turn to high and cook for 10-15 minutes until sauce thickens. 
  4. Enjoy!
