Ingredients
1 onion, chopped
4 garlic cloves, minced
1 lemon, juiced and zested
2 tsp dried rosemary
1 tsp dried thyme
4 boneless, skinless chicken breast
20 pitted green olives, crushed
2 TBSP unsalted butter, cut into small pieces
2 TBSP water
2 TBSP arrowroot
Directions
- Combine onion, garlic, lemon juice & zest, rosemary and thyme in the bottom of the crockpot. Top with chicken, olives and butter.
- Cook on keep warm all day.
- If sauce is not thick at the end of the day, remove chicken and in a small bowl combine water and arrowroot. Add mixture to crockpot, turn to high and cook for 10-15 minutes until sauce thickens.
