Ingredients
2 eggs (per omelet)
Bell peppers (green, red, orange, yellow – your choice)
Roma tomatoes
Yellow onions
Any other veggies, protein &/or cheese ( I used uncured turkey bacon and sharp cheddar cheese!)
Salt and pepper
1 Tablespoon greek yogurt
Instructions
1. Wash and dice the vegetables in to a fairly small dice.
2. Also dice protein into small pieces and shred cheese.
3. Crack 2 eggs into a bowl and add salt and pepper for seasoning.
4. Add 1 Tablespoon of greek yogurt to eggs and whisk together.
5. Mix in veggies, protein and cheese.
6. Add egg and veggie mix to waffle maker and cook until eggs are set.
7. Serve with some fresh tomatoes and top with shredded cheese if desired. Enjoy a healthy waffle.
