2017 Week 12 Italian Chicken

Serves 2 

Ingredients 

2 6oz Chicken Breasts 

2 tsp dried italian seasoning 

4 cups Arugula 

.50 Buffalo Mozzarella ball 

2 cups Asparagus 

1 tsp Extra virgin olive oil 

Instructions 

  1. Season Chicken breasts with Italian seasoning and bake or grill until done.  Top with each chicken breast with .25 buffalo Mozzarella ball. 
  2. Drizzle olive oil on asparagus and roast until desired doneness.
  3. Place 2 cups arugula in the bottom of two salad bowls.  Top each bowl with 1 chicken breast and 1 cup of asparagus. 
  4. Enjoy!
