2020 Week 17 Pizza Quesadillas with Dipping Sauce

Ingredients

8 ounces organic and gluten free pizza sauce (see video for the brand I use!) 

4 (8-inch) sprouted or brown rice tortillas

6 ounces sliced mozzarella cheese

4 ounces uncured pepperoni 

Instructions 

  1. Pre-heat oven to 350 degrees. 
  2. Lay 1 tortilla on a pizza stone.  
  3. Cover tortilla with 1/2 of the mozzarella an pepperoni.  
  4. Cover with another tortilla. 
  5. Place pizza stone in oven and heat until cheese is melted.  
  6. Cut in quarters.
  7. Repeat steps 2-6 for last 2 tortillas 
  8. Divide dipping sauce between the 2 pizza quesadillas. 
  9. Enjoy!
