Healthy Brownies

INGREDIENTS

1 can – 15 oz no-salt-added organic black beans, drained and rinsed

3 eggs

1/3 cup of butter, ghee or coconut oil, melted

1/4 cup unsweetened coco powder

1/8 tsp salt

2 tsp vanilla

1/2 cup + 2 TBSP coconut sugar

1/2 cup unsweetened baking chocolate or carob chips

1-2 scoops No Whey (pea protein powder)

1/3 cup chopped walnuts (optional)

DIRECTIONS

  1. Preheat oven to 350.  Spray or oil pan or use cupcake liners
  2. Place the beans, eggs, melted butter/oil, coco powder, salt, vanilla, protein powder and sugar in the bowl of a food processor and blend until smooth.  Remove blade and gently stir in the chocolate chips and walnuts.
  3. Transfer to the prepared pan and bake for 30 to 35 minutes.
  4. Enjoy!

Fiber Protein Balls

Ingredients:

.5 cup pea protein powder

.25 cup almond butter

2 tbsp. Psyllium husk

2 tbsp. coconut oil

3/4 tsp. liquid stevia

1 tbsp. chia seeds

2 tbsp. cacao powder

2 tbsp. water

Directions:

  1. Combine all ingredients into a mixing bowl
  2. Add water until you get the right dough-like consistency
  3. Roll your mixture into 10 balls
  4. Refrigerate for at least 30 minutes before enjoying.

Quinoa Protein Balls

Ingredients 

1 cup No Whey

1/2 cup almond butter

2 cups cooked quinoa

1/2 cup almond meal

1/2 cup dried mulberries

3/4 tsp liquid stevia

Directions

  1. Mix all ingredients together in a bowl.
  2. Add mulberries and gently fold in.
  3. Roll into 20 balls
