2018 Week 4 Crockpot Garlic Chicken

Ingredients

1/2 cup fat-free, low-sodium chicken broth (certified gluten-free if necessary)

3 tablespoons dry white wine

2 tablespoons cognac (optional)

1 -2 pounds of chicken breasts 

1 1/2 teaspoons extra-virgin olive oil

1 1/2 teaspoons ghee

1/4 teaspoon salt

1/8 teaspoon freshly ground black pepper

40 garlic cloves, peeled (about 4 whole heads)

2 teaspoons fresh thyme leaves

4 teaspoons chopped fresh parsley (optional)

Instructions

  1. Place chicken in the bottom of the crockpot. 
  2. Mix all ingredients and pour over chicken. 
  3. Cover and cook on LOW for 4 hours or keep warm all day, until chicken is done.
