Week 51 Bread Winner Dinner

Ingredients 

4 eggs 

1 TBSP unsweetened almond milk 

1 tsp extra virgin olive oil 

1/2 cup broccoli florets 

1/4 cup chopped onion

1 1/3 cup bread cubes 

3 TBSP shredded sharp cheddar cheese 

Instructions 

  1. Pre-heat oven 375. 
  2. In a bowl whisk together eggs and milk.
  3. In a oven safe skillet heat 1 tsp EVOO over medium heat.  Add broccoli and chopped onion; cook 4 minutes, stirring occasionally.  Stir in bread cubes.  Add egg mixture. Cook 2 minutes or until eggs are partially set.  Sprinkle with cheese. 
  4. Transfer to ove and bake until eggs are fully set.
