Ingredients
2 cups Bob’s Red Mill Biscuit and Baking Mix
1 tsp Xanthan Gum
1 tsp sea salt
2.5 tsp baking powder
6 TBSP, cubed frozen butter
3/4 buttermilk
Directions
- Preheat oven to 425.
- In a large bowl combine the flour, xanthan gum, salt and baking powder.
- Use a pastry cutter to cut the butter into the flour mixture until it resembles coarse cornmeal.
- Stir the buttermilk until incorporated.
- Roll out the dough onto a floured surface to your desired thickness. *Keep in mind that these biscuits will not rise very much.
- Chill biscuits in the refrigerator for 30 minutes.
- Bake for 12-15 minutes or until done.
