Week 29 Crockpot Chicken Cordon Bleu

Ingredients 

1 pound chicken breast 

.5 cup chicken broth

1 TBSP minced garlic 

1 TBSP dried oregano 

1 package (6 slices) Canadian bacon, cut into squares

.5 cup Yogurt 

.5 cup Sharp Cheddar cheese 

Directions 

  1. Layer chicken in the bottom of the crockpot.  Top with bacon.  
  2. Mix broth, garlic and oregano together and pour over the top. 
  3. Cook on low all day. 
  4. Remove chicken and bacon. 
  5. Pour broth in blender add yogurt and cheese – blend. 
  6. If desired add mixture to sauce pan on stove and thicken using arrowroot and water. 
  7. Pour sauce over chicken and bacon, serve. 
  8. Enjoy!
