Ingredients
Dressing:
1/2 cup light olive oil vinaigrette
1/4 cup coarsely chopped pitted Natural Delights Medjool Dates (about 4 dates)
1 to 2 cloves garlic
Salad:
2 1/2 cups 1/4-inch cubes cold, cooked chicken
2/3 cup 1/4-inch cubes pitted Natural Delights Medjool Dates
2/3 cup 1/4-inch cubes red bell pepper
1/2 cup sliced green onions
12 small butter lettuce leaves
1/4 cup slivered almonds, toasted
Directions
1. Puree all dressing ingredients in a small blender or food processor until smooth. Divide into four Mason Jars and place in the bottom.
2. Layer the mason jars in the following order chicken, dates, bell pepper and green onions, almonds and lettuce.
3. Store in refrigerator for the week.
