2020 Week 24 Vanilla Coconut Protein Balls

Ingredients 

1 cup of cashews 

1 cup of dates 

1 scoop of No Whey (Pea Protein Powder) 

Coconut, for coating

Instructions 

  1. Place cashews in a food processor and pulse until they are a smooth flour consistency. 
  2. Place dates and pea protein powder and pulse.  If the mixture is too dry add a little water. 
  3. Roll into balls and roll in coconut to coat. 
  4. Enjoy!
