2019 Week 21 Coconut Lemon Protein Balls

Ingredients

1/2 cup No Whey (pea protein powder

1/2 cup Melted Coconut Oil

3/4 cup Unsweetened Shredded Coconut

2tbsp Honey

2tbsp Lemon Juice + Zest to Taste

2tbsp Coconut Flour

Instructions 

  1. Combine protein powder melted coconut oil, unsweetened coconut, honey, lemon juice + zest, and coconut flour in a mixing bowl.
  2. Form batter into balls.
  3. Place balls on a parchment-lined plate in the refrigerator for 30-45 minutes.
  4. Enjoy!
