2018 Week 5 Chicken Avocado Caprese Mason Jar Salad

Ingredients

Dressing:

1/4 cup balsamic vinegar

2 tablespoons extra virgin olive oil

2 teaspoons coconut sugar

1 teaspoon minced garlic

1 teaspoon dried basil

1 teaspoon salt

Salad:

4 grilled chicken breast

5 cups Romaine lettuce leaves

1 avocado, sliced

1 cup cherry or grape tomatoes, sliced

1/2 cup mini mozzarella cheese balls

1/4 cup basil leaves, thinly sliced or 2 TBSP dried basil leaves 

Salt and pepper, to season

Instructions

  1. Mix all dressing ingredients together in a small pint mason jar.  I like keeping my dressing separate. 
  2. Divide salad ingredients between 4 mason jars and layer as follows; dressing, tomatoes, chicken, cheese, basil, avocado and lettuce. 
  3. Enjoy!
