Ingredients
4 Ezekiel English muffins
2 TBSP Extra Virgin Olive Oil
1 TBSP Balsamic Vinegar
8 tomato slices
8 hard-boiled eggs
grated mozzarella (optional)
Directions
- Cook hard-boiled eggs
- Toast 8 English-muffin halves and place in to go containers.
- Layer tomato slices and one hard-boiled egg sliced.
- Layer mozzarella (optional).
- Sprinkle with sea salt and drizzle with 1 TBSP of the olive oil and balsamic vinegar mixture.
