Ingredients
1/2 cup Quinoa, cooked
¼ cup pumpkin seeds
4 oz. snap peas · 4 oz. snow peas
4 oz. broccoli
Fresh mint
Fresh dill
1 lemon & zest
1 TBSP honey or .5 tsp liquid stevia
1 TBSP Dijon mustard
½ cup feta cheese
2 TBSP extra virgin olive oil
Directions
1. Add all ingredients in the following order to the mason jar. Quinoa, pumpkin seeds, broccoli, snow peas, snap peas, feta cheese, mint and dill.
2. Make the vinaigrette. In a small mason jar combine the honey/stevia, mustard, 1 TBSP lemon zest and juice, and 2 TBSP extra virgin olive oil
3. Enjoy.
