2018 Week 17 Fig & Goat Cheese Mason Jar Salad

Ingredients

2 cups mixed salad greens

4 dried figs, stemmed and sliced

2 oz. cooked chicken chopped 

1 ounce fresh goat cheese, crumbled

1.5 tablespoons slivered almonds, preferably toasted

Dressing 

2 teaspoons extra-virgin olive oil

2 teaspoons balsamic vinegar

.5 teaspoon honey

Pinch of sea salt

Freshly ground pepper to taste

Directions

  1. Layer ingredients in the following order in the Mason jar. 
  2. Dressing, figs, almonds, goat cheese, chicken and mixed greens. 
  3. Multiple recipe to make ahead for the week. 
  4. Enjoy!
