2018 Week 7 Garlic Salmon and Chicken

Ingredients 

3 tbsp. ghee, divided

1 tbsp. extra-virgin olive oil

2 4-oz. salmon fillets

2 4-oz. chicken breast 

kosher salt

Freshly ground black pepper

3 cloves garlic, minced

Zest and juice of 1 lemon

1 tbsp. freshly chopped parsley, plus more for garnish

Instructions

  1. In a large skillet over  medium heat, melt 1 tablespoon ghee and olive oil. Add chicken  and season with salt and pepper. Cook until golden, 3 minutes per side. Transfer to a plate.
  2. To skillet, add remaining 2 tablespoons ghee. Once melted, add garlic and cook until fragrant, 1 minute, then stir in lemon zest and juice and parsley. Place salmon in skillet and return chicken  to skillet and spoon over sauce.  Continue to cook until chicken is done and salmon is desired temp. 
  3. Garnish with more parsley and serve.
